Cocktail Wedding

It’s time to showcase another incredible wedding Ultimo had the privilege to cater for! Claire + Graydon were recently married at The Quarry Amphitheatre on Saturday the 23rd of April 2016. Graydon & Claire were good friends for a couple of years before they started dating. One afternoon on a trip to one of their favorites – Wise Winery at Eagle Bay, after a beautiful lunch Graydon asked Claire if she would like to join him on the beach which is when he popped the question! Little did Claire know that he had been trailing the beach the night before scoping out the perfect spot!

THE STYLING

Set amongst the rustic lime stone walls and natural bush lands of Quarry Amphitheatre was both the ceremony and reception. The couple decided on a garden party theme for their special day. Our talented Wedding Specialist, Nicola Badham, worked with Claire and family in order to pull together all the details of the night.

The entire evening was full of glamour and elegance. Claire was glowing in her wedding dress from Hob Nob as she walked down the aisle. Fairy lights hung over the dance floor by Micktrics Events, setting a beautiful ambience for the festivities and Katie Cooper Floral Designs decked the place out with her jaw dropping floral designs.

THE CUISINE 

The couple chose to have a cocktail style wedding for a more relaxed feel. In order to achieve this Ultimo served a series of canapes and signature bowls to suit the couple’s laid-back vibe.

THE GRAZING TABLE

Olives, Blue cheese, Creamed base cheese, Cheddar cheese, strawberries, nuts, grapes, dried fruits and fresh honeycomb, Olive bread, Sour dough, Rye, Lavosh & wafers, French baguette, Olive oil & Aged balsamic vinegar, cured & chargrilled meats, Prosciutto, Salami, Grilled chorizo, Chicken liver parfait

Canapés

Petite wild mushroom, tarragon flan, goats cheese mousse

Rolled sous vide beef tenderloin, beetroot jam, red cress

Tomato, bocconcini and crisp basil, served in a small glass pot, drizzled with balsamic

Vietnamese Rice Paper Rolls

Tequila and lime pan seared scallops with burnt butter sauce, served on a spoon

Haloumi, pumpkin and honey tarts

Pumpkin, feta and preserved lemon arancini (V)

French trimmed marinated lamb cutlet, basil pesto

Kataifi wrapped prawn, wasabi infused mayonnaise

Lamb Moroccan filo cigars, pomegranate pearl, yoghurt dip

12 hour braised beef shoulder, fortified wine, hazelnut & rye crumb croquette

Signature bowls

Torn chicken breast, green & grains salad

Braised pinot beef cheek, pommes puree, refined jus

Dessert

Lemon tart

A trio of macarons – White chocolate & raspberry; Nutella; Salted Caramel

Chocolate + drambuie brownie

Toffee + chocolate profiterole

 

THE PARTY

The rest of the evening was a celebration to remember – the pair’s dearest friends and family gave heartfelt toasts and laughed a lot! For soak, guests enjoyed freshly wood fired pizzas and the dance floor was going off from straight after the speeches until the very end of the night. The couple wanted a big party, and it was exactly that.

Claire’s Tips for other Brides:

Double check everything the week of the wedding – make sure you know that your suppliers are all lined up and everything has been delivered so that there is no stress on the day. And make the most of any friends / family who are offering to help – the more you can delegate jobs, the less you will have to worry about.
