This was how the EOFY should be celebrated! With lots of wine, delicious cuisine, scrumptious desserts, and more wine! Roberts Days recently contacted Ultimo to create a menu that would simply amaze their guests, so with that, we put Executive Head Chef Matt Leahy to work! Matt’s mission was to create a menu that would not only taste great but would excite guests in a shared table setting.

THE CUISINE

Matt designed an indulgent menu to tantalise guests taste buds with flavour, texture and unique presentation. Using the freshest seasonal produce from our local suppliers;

CANAPES

Seared prawn, winter grifio, cous cous & basil

Char grilled brussel sprout, pancetta, maple pudding, popping candy

Pumpkin & ginger wonton, coriander, nam jim dip

THE SHARED TABLE 

White roll / Seeded traditional / Olive sour dough / Parisienne Grain / White finger / Quinoa gluten free roll

Served with butter / Aged balsamic reduction / virgin olive oil / ocean sea salt

MAINS

Moroccan shoulder of lamb, plump apricot & cracked wheat, sumac yogurt

Char-grilled spiced chicken breast, lemon, and coriander yoghurt

Grilled salmon medallion, red pepper & hazelnut salsa .  Served with a side of crisp lemon pepper chickpeas

SIDES

Duck fat potatoes, rosemary & toasted cumin

Perfectly steamed vegetables, parsley butter

Frivolous garden fancy salad, pink grapefruit fillets, frisee lettuce, toasted almonds, shaved fennel, house dressing

TO FINISH – “SWEET TOOTH”

Caramel & praline tart

Torched lemon meringue flan

Mini orange cake, cheese frosting

“CHEESE PLEASE”

Shared platters of cheese, pear compote, ginger & fig wafers

Thank you so much for your wonderful catering for our event on Friday night. Your entire team worked tirelessly all night to deliver a beautiful menu for our guests and did a fantastic job dealing with the showers. Everyone really enjoyed all the menu and drinks choices and had a really great night, despite the rain – it certainly didn’t dampen our Christmas Party spirits. Thanks again for everything, I appreciated all that you did for us on Friday night and I look forward to working with the Ultimo team again.
