Quay to the Caribbean

Quay to the Caribbean was a Christmas activation like no other, one that took our guests on a journey over the high seas only to land shipwrecked on the tropical oasis none other than Quay to the Caribbean! The Activation was held in the heart of Perth city at Elizabeth Quay over a 3 week period in December. QTTC (Quay to the Caribbean) was designed to resemble tropical island of Caribbean inspired food, drinks, music and experiences.

As Ultimo are the event specialists it was our aim to ensure none our our guests would be left standing around with nothing to do, so we designed the event to include many interactive touch points throughout the night. The aim was for guest to spend the night exploring the site discovering new and exciting areas and activities. To accomplish this each Tipi was designed to be totally unique, one was the  Instaprint Tipi where guests could have their Instagram picture printed to take home. Another Tipi was the Captains lounge fully decked out by our friends at The Event Mill to resemble a real Captains of a ship’s headquarters. Lastly was the Tanqueray Gin Tipi – a whole Tipi dedicated to gin cocktails!

The Entertainment on the night included the likes of Captain Clint, a Perth entertainer who dresses as a Jack Sparrow from Pirates of the Caribbean who does magic and even throws fire. There were stilt walkers a silent disco, DJ’s who preformed from the custom made crows nest and we even had 8 piece band preform.

Canapes

‘Doubles’ – Fried dough, with curried chickpeas, cucumber chutney, pepper sauce

Caribbean chicken curry puff with baigan choka dip

 Banana leaf steamed prawns with Barbados grigio

Cuban sandwich – Ham, roasted pork, Swiss cheese, pickles, mustard

Caribbean tart, lime, fig, goats chesse & chili

Interactive Food Stations

Trinidad Pepperpot of lamb, papaya salad & split pea roti

Coconut swordfish, yellow curry rice, cucumber raita

Skewered charcoal Jerk chicken, pineapple chow & Kingston slaw

Bahamah Conch (Clam) Chowder with a Callaloo drizzle & Caribbean dumplings

The Salad Station:

Seared haloumi, lemon emulsion, crisp cos, pepitas

Watermelon, feta, iceberg + mint
