Degustation is a French culinary term that refers to sampling an array of small dishes served one after the other. The term also encompasses ideas like savoring of food with all the senses, appreciation of ingredients, the chef’s technical skills, and enjoying food with good company.

The Royal Agricultural Society recently contacted Ultimo to create a menu that would simply amaze their guests, so with that, we put Executive Head Chef Matt Leahy to work! Matt’s mission was to create a menu that would not only taste great but would excite guests with all of their senses.

THE MENU

Seaweed brioche and homemade butter

Texture of parsnip, free range yolk, smoked bacon and maple

Seared scallop, celeriac velvet, black pudding, pink lady and cucumber refresher

Line caught snapper, ocean leaves, sweet pumpkin, samphire and tomato essence

Sous vide breast of duck, foie gras and roasted chestnut with cherry notes

Perfect loin of WA lamb, heirloom beetroot, cauliflower florets and raspberry

Presentation of Cashel Blue, Italian meringue glass pear, balsamic and yellow carrot

Mint crème brulee, cinnamon smoke and “late Jane” biscuit

I write to congratulate you and your chefs and staff for a truly inspirational degustation dinner for the RAS wine judges on Monday evening. I received many positive remarks from our committee and guests during the night and again on Tuesday when I was observing the judging at the Showgrounds. I am often amazed at the inventiveness of chefs with using and presenting food, and your chefs that night certainly excelled. Well done.
