Cirque de Paris

Located at Elizabeth Quay, Cirque de Paris was Ultimo’s second corporate Christmas party event. Guests were spoiled with choice as they wandered through the fringes of Paris to catch a glimpse of the edgy underground world of ‘Cirque de Paris’. Forget everything you know about the circus. More glitz, more glamour. Amazing sideshow performances, refreshing beverages and tantalizing morsels of festival style food. Guests experienced an immersive event space with themed ‘Fringeworld’ bar and lounge, Club ‘Moulin Rouge’ with live DJ & dance floor, interactive food stations, premium beverages, live entertainment including Kinetica contortionists, fire shows, Moulin Rouge dancers and even a photo booth.

CANAPE TO START

Mini croque monsieur sandwich – Baked ham, ‘fromage’ cheddar, Dijon mustard & béchamel Arancini of champignon & forest mushroom, parmesan & white balsamic sauce

Festival style chicken lollipop, marinated in herbs, with an ash dip

Pulled pork belly empanadas, with mild hot sauce

SUBSTANTIAL STATIONS

White fish, with blackened corn salsa & casava leaf compote. Inspired by the famous Paris street food Smoked & slow cooked pulled beef brisket slider, gruyere cheese, garlic aioli, crunchy slaw, brioche bun Brioche is a pastry of French origin, it’s high butter content gives it a rich and tender crumb

Loaded French Fries, with black bean, pico de gallo, chilli, avocado, sour cream & tosted corn tortilla. Pico de gallo is a very popular mild salsa made from chopped tomato, onion, cilantro, jalapeños and lime.

‘Chocolat Chicken’, long grain fluffy rice, lime, tomato & coriander. ‘Mole’ contains about 20 ingredients, including chili peppers and raw chocolate, which works to counteract the heat of the chili peppers.

Cafe tart with French caramel & chocolat

Coconut & mango tapioca pearl pudding Tapioca pearl cup (similar to rice pudding) with coconut and fresh mango.

Eventing can be hard, but with Ultimo, we had no stresses! They took care of everything. From the initial information package, meeting with the event coordinator and through to the meet and greet on the day. It was easy, the staff were amazing, and the food and venue incredible!
