COVID-19 Hospitality Hygiene Staff Training
Ultimo prides itself on exceptional hygiene standards to ensure the safety of all staff and customers. That’s why all Ultimo staff (including office staff) have completed the COVID-19 hospitality hygiene training course.
We want to reassure you that your safety is our priority and will ensure all staff are kept up to date with hygiene practices in line with the advice from the Australian government.

At a time like this, the hospitality industry faces a big challenge. There is a fraction of our usual work. Despite the hurdles over the past 2+ years, we have stuck together. Ultimo has kept our entire team employed because we care about our employees and their families, and once this is over we can’t bounce back without our valuable staff. We want to make sure we can deliver the best service for your function or event with the same exceptional staff post COVID-19.

What Extra Measures Are We Taking?
As one of WA’s most reputable caterers, we have always maintained a high level of hygiene standards. We have implemented the below best-practice measures along with our standard health and hygiene procedures to ensure peace of mind.
GENERAL STANDARDS FOR ALL STAFF
- Staff members who have returned from a high-risk jurisdiction or have been exposed to confirmed or suspected Coronavirus cases are stopped from returning to work within their first 14 days after their return.
- If any staff fall sick, for any reason, they are required to obtain a letter stating that they are safe to return to work prior to entering the workplace.
- All staff informed of good hygiene practices and are ensuring adherence and continued focus.
- Any staff that can work from home during high risk periods, can do so.
FOOD PREPARATION, DELIVERY & SERVICE STANDARDS
- We employ all usual measures as per the relevant food safety standards and always operate a spotless kitchen.
- We actively monitor the health of our kitchen staff and in case they fall sick, we do not permit them to remain at work.
- We require chefs, drivers and wait staff to always sanitise their hands prior to picking up product, and are requiring all staff to wear food safe gloves during function service. Gloves will be changed regularly.
- We restrict access to our kitchen facility to essential staff only.

Many functions and events may be postponed for various reasons. However, our ‘On Demand‘ deliverable catering service remains a popular and safe way to look after your team during this time. (Not to mention easier than dealing with supermarkets right now!)
We offer plenty of individual lunchboxes or salads with individually wrapped Biopack cutlery sets, for additional reassurance.
Online orders for same day delivery ensures that no matter what your day throws at you – you have the flexibility to order catering delivered safely to your team. COVID-19 CANCELLATION POLICY
Ultimo recognises that these are unprecedented and uncertain times and we want to offer our clients more security in their decision making process in regards to hosting functions. Therefore, we are offering a unique policy that takes precedent over our existing terms and conditions, to ensure flexible, fair and reasonable outcomes should Government restrictions be reimposed.
COVID-19 in WA – resulting in the forced cancellation of functions.
In the event of the above, Ultimo will forgo our normal cancellation terms, and instead charge a reasonable administration fee to cover any production costs and resources allocated to this function, plus any non-refundable third-party infrastructure, hire or event fees. We will do everything within our power to ensure any costs are recouped from these third-parties, to ensure the best financial outcome for our clients. However, we are unable to control or guarantee the policy decisions of any third parties.
COVID-19 Cancellation Charges
5% administration fee of total quoted function, along with any direct food and labour costs incurred. Plus any third party costs incurred by Ultimo, as stands at the announcement of the Government restrictions.

Ultimo’s Covid’19 Vaccination Policy
All Ultimo staff will be fully vaccinated by 31 January 2022, in accordance with government requirements.
Effective from 31 January 2022 any event at a licenced venue, or venues where Ultimo’s liquor licence is engaged – where food, non-alcoholic or alcoholic beverages are served – proof of vaccination will be required and is the responsibility of the event organiser to ensure compliance with this State government requirement.
As the event organiser, it is your responsibility to ensure compliance with all relevant mandates and restrictions in relation to activities undertaken within the venue. At all times you must ensure:
- Compliance with State government mandates, regulations and public health orders;
- Ensure attendees scan in using the venue QR codes provided or set up a specific one applicable to your event;
- Ensure that event attendees are wearing masks in line with the current requirements; and
- Comply with any density restrictions in place at the time of your event.
Please note that this guidance is current at this point in time, and you are encouraged to stay informed of updates that relate to your event circumstances.
For functions held at home or at a private residence, we encourage all guests to be double vaccinated. Should there be non-vaccinated guests attending, we politely request that we are advised no later than 2 weeks before your function date. We cannot guarantee that our vaccinated staff will wish to work at a function with unvaccinated guests, and we cannot require them to do so. Our policy is full transparency, to enable our team to make the decision that’s best for their circumstances. We will advise with as much notice as possible if we cannot staff a function due to unvaccinated guests attending, and there will be no charge if we are forced to cancel a function for this reason, provided our team are advised of the above with reasonable notice of 7 days.
