The Menu
Curated by Chef Guillaume Brahimi and brought to life by Ultimo Catering. Guests began with a trio of exquisite canapés: freshly shucked oysters with a sharp mignonette, cloud-like gougères laced with Comté and truffle, and delicate crab sandwiches kissed with coriander mayonnaise.
An entrée of WA marron with braised leeks and sauce gribiche set a refined pace, before the main event: a rich Wagyu beef daube, slow-braised to perfection, served with velvety Paris mash and crisp baby leaves in a shallot vinaigrette.
The evening closed on a note of theatre and indulgence, golden profiteroles filled with vanilla bean ice cream and finished with a cascade of glossy Valrhona chocolate sauce. A menu every bit as golden as the night itself.
