The Governor’s Benefit Ball 2026: From Red Dirt to Red Carpet
Across three extraordinary nights in August, Ultimo Catering & Events had the privilege of catering one of Western Australia’s most distinctive events, The Governor’s Benefit Ball 2026, hosted by His Excellency the Honourable Chris Dawson AC APM, Governor of Western Australia and Mrs Darrilyn Dawson at the historic Government House Ballroom.
Held on 6–8 August, the Ball brought together exceptional Western Australian food, beverages, performance and philanthropy under the theme From Red Dirt to Red Carpet.
Inspired by Western Australia’s transformative gold rush era of the 1890s, the theme celebrated a period that helped shape our State and fund some of its most significant public buildings, including the magnificent Government House Ballroom itself.
For Ultimo, it was an opportunity to do what we love most: bring people together through exceptional food and hospitality, while showcasing the quality of Western Australian produce on one of Perth’s most prestigious stages.
Three Nights. One Extraordinary Ballroom.
There are few venues in Perth quite like the Government House Ballroom.
Steeped in history and sitting in the heart of the city, the Ballroom provided a spectacular backdrop as guests arrived for three evenings of black-tie dining, live performance and celebration.
The entertainment was equally impressive, bringing together West Australian Ballet, West Australian Opera and the WA Jazz Project in a showcase of some of our State’s finest artistic talent.
Delivering the culinary services for an event of this calibre once demands precision. Delivering it across three consecutive nights requires another level of consistency.
From the first canapé to the final beverage service, our chefs, event managers and front-of-house team worked behind the scenes to ensure every service felt as considered on Saturday night as it did when the Ballroom doors first opened on Thursday.
Raising a Glass to WA
The local focus extended beyond the plate.
Ultimo’s team served a beverage selection showcasing some of Western Australia’s leading producers, including Voyager Estate wines and Shelter Brewing Co beers.
Voyager Estate Sparkling Rosé 2022, Sauvignon Blanc Semillon 2025 and Modern Cabernets 2022 accompanied the dinner, while Shelter XPA, Lager and Pale Ale rounded out the Western Australian beverage offering.
Limeburners Single Malt Whisky was served from a stunning custom ice station. Another opportunity for guests to experience the diversity and quality being produced right here in our State.
Hospitality With Purpose
Beyond the Ballroom, menu and performances, the Governor’s Benefit Ball had an important purpose.
Funds raised from the 2026 event supported four Western Australian organisations doing meaningful work within our communities: Stronger Families Foundation, DVassist, St John of God Foundation – Moort Boodjari Mia, and St John WA – First Nations Facilitators.
It’s this combination of hospitality and purpose that makes events like the Governor’s Benefit Ball particularly special.
A beautiful dinner can create a memorable evening. But when hundreds of people gather around a table to support organisations making a tangible difference in Western Australia, the impact reaches well beyond the event itself.
The Ultimo Team
For the Ultimo team, it was an honour to play our part in bringing From Red Dirt to Red Carpet to life and to deliver a dining experience worthy of one of Western Australia’s most significant rooms.
From Government House honey and produce sourced across the State to Western Australian wine, beer, whisky, ballet, opera and jazz, the Governor’s Benefit Ball 2026 was a genuine celebration of what WA does exceptionally well.
Events of this scale are about so much more than what appears on the plate. Behind every course is a team working together to get the details right, from the kitchen through to the Ballroom floor. Across three nights, our chefs and service teams delivered hundreds of beautifully presented plates, carefully timed around live performances, speeches and the flow of each evening.
Our focus was simple: to make the hospitality feel effortless. To allow guests to sit back, take in the Ballroom, enjoy the performances, share an exceptional meal and be completely present in the occasion. That’s what great hospitality should feel like.
Three nights. One remarkable historic setting. And hundreds of guests brought together through food, culture, community and generosity.

A Menu Inspired by WA
The dining experience was designed around beautiful ingredients, thoughtful presentation and flavours that celebrated Western Australia.
Guests began the evening with a selection of canapés.
Canapés
Lemon chicken mousse tart with fermented chilli and crisp chicken skin crumb.
Honey pepper and goat’s cheese served in a charcoal cone.
Two-bite spiced lamb empanada with harissa yoghurt.
Charred cauliflower croquette with lemon tahini and pickled currants.
Once guests moved into the Ballroom, artisan dinner rolls and butter were followed by an alternating entrée service.
Entrée
Mottainai Wagyu lamb, paired with Government House honey, pickled carrot, jus and truffle potato foam.
Alternating with
Goat’s cheese and spinach tortellini, baby courgetti, lemon butter, bush tomato, parmesan tuile and wildflower.
Main Course
Butter-poached Mount Barker chicken with a crispy skin shard, Warrigal greens, French beans, garlic potato mousseline and jus.
Alternating with
Stirling Range beef shoulder, broccolini, confit cherry tomatoes, fondant potato, celeriac purée, crispy leek and rich jus.
Dedicated plant-based dishes were prepared for dietary requirements, ensuring the experience remained considered and beautifully presented for every guest.
Dessert was prepared by the Government House team, completing an evening where the venue, entertainment and menu worked together to tell a distinctly Western Australian story.
