The humble egg. A house hold staple, low in fat, high in protein, filling and quick to prepare – scrambled eggs are an Aussie fav. “If there’s an egg in the house, there’s a meal in the house” –  Oh god, I’m turning into my mother. But she was right. Eggs are boss and super versatile.

CITRUS SCRAMBLED EGGS

Cook time: 3 mins  |  Serves: 1

Adding a squeeze of lemon or lime juice, or a few generous drops of orange juice, to scrambled eggs has the same effect as salt does on your taste buds: it makes you salivate. Literally, mouth-watering scrambled eggs.

 

INGREDIENTS

2 eggs

Knob of butter

Squeeze of fresh lemon or lime juice

1 pinch salt and pepper, to taste

 

INSTRUCTIONS

Whisk the eggs and heat butter in non stick pan

Pour eggs into hot pan and keep heat on medium – high

Let eggs set and drag them with spatula to other side

Then keep folding them till they are done

Add salt & pepper to taste

 


 

BLACK TRUFFLE OIL SCRAMBLED EGGS

Cook time: 3 mins  |  Serves: 1

These scrambled eggs are absolutely delicious drizzled with touch off black truffle oil and sprinkled with himalayan salt. Stop it!

 

INGREDIENTS

2 eggs

3 tablespoons milk

Knob of butter

Black truffle Oil

Himalayan Salt

 

INSTRUCTIONS

Whisk the eggs and heat butter

Pour eggs into hot skillet and keep heat on high

Let eggs set and drag them with spatula to other side

Then keep folding them till they are done

Drizzle with truffle oil

Add Himalayan Salt and enjoy

 


SCRAMBLED EGGS WITH FETA

Cook time: 3 mins  |  Serves: 1

This classic Greek favourite adds a little zest to the standard scrambled eggs. Not much salt is needed as the feta is very salty.

 

INGREDIENTS

2 eggs

3 tablespoons milk

Knob of butter

1/2 cup crumbled feta cheese

1 pinch salt and pepper, to taste

 

INSTRUCTIONS

Whisk the eggs and milk together and heat butter in non stick pan

Pour eggs into hot pan and keep heat on medium – high

Let eggs set and drag them with spatula to other side

Add feta cheese and keep folding eggs till they are done

Add salt & pepper to taste

 


 

Smoked Paprika Scrambled Eggs

Cook time: 3 mins  |  Serves: 1

These scrambled eggs are seriously tasty and just a little bit spicy. Serve on naan bread for a unique twist.

 

INGREDIENTS

2 eggs
3 tablespoons milk

Knob of butter
1/3 tsp smoked paprika

1/3 tsp mild curry powder
1 pinch salt and pepper, to taste
