Mount’s Bay Sailing Club, Cocktail style wedding catering

Diana & Chris were recently married at Mounts Bay Sailing Club on Friday the 27th of March 2015. Diana met Chris on a ski trip in Aspen, where Chris was a local. The two hit it off instantly and it was inevitable that they would end up together. A few years later the still very much in love couple were visiting Aspen again for Diana’s 30th birthday. One night after dinner and a few drinks Diana found her dream engagement ring hidden under her pillow which is when Chris asked her to marry him! She said yes of course!

THE STYLING

Set in a beautiful clear riverside marquee, their wedding was more than just a ceremony, it was a grand celebration surrounded by their family and friends. Our talented Wedding Specialist, Kaila Welsford, worked with Diana and her mother in order to pull together all the details of the night.

The entire evening was full of glamour and elegance. Diana was glowing in her wedding dress made by Katie from loui col designs as she walked down the aisle during the procession. Fairy lights hung over the dance floor, setting a beautiful ambiance for the festivities. Diana and Chris hired giant Jenga and Connect four games for their guest to play.

THE CUISINE

The couple chose to have a cocktail style wedding for a more relaxed feel. In order to achieve this Ultimo served a series of canapes including our champagne poached prawns with fresh mango salsa, prawn gyoza’s, confit orange duck, bamboo chicken teriyaki, beef and shiraz mini pies, herb and parmesan crumbed lamb cutlet and our 12 hour pork belly with apple marshmallow. Later in the evening we served two of our signature bowls to ensure guests didn’t go hungry, including our Barramundi fillet, orange, shaved fennel with lemon butter and braised pinot beef cheek, pommes puree, refined jus.

THE PARTY

For the wedding cake, the couple had a delicious white chocolate mud cake and because Diana isn’t the biggest fan of dessert they also had cheese platters placed around for guests to enjoy.

The rest of the evening was a celebration to remember. After the two’s dearest friends and family gave heartfelt toasts, guests danced along side the couple to their wedding song “lets stay together” by Al Green and enjoyed our late night chicken schnitzel sliders.
