Two baked cheese recipes to try this Winter

Two insanely tasty, cheesy and gooey baked cheese recipes to indulge in this winter. Get on board! Everyone’s doing it. Serve with crunchy olive oil drizzled bread or crackers. (And a cheeky bottle of red of course).

TIP: When baking, keep your excitement at bay and a close eye on that cheesey goodness to avoid over-cooking. When it starts to bubble, you know it’s ready.

 

Honey-Baked Cheese Recipe with Pistachios & Cranberries

This appetizer is the black-tie version of grilled cheese. This recipe is much easier to make and has a bit of panache and easy elegance that only a select few can pull off. It’s like the George Clooney of cheese appetizers, if you catch my drift.

Ingredients

  • 1 (8 to 9 ounce) wheel Brie, Camembert, or other soft cheese
  • 1/2 cup shelled pistachios
  • 1/2 cup honey
  • 1 3-inch piece cinnamon stick or 2 crushed cardamom pods
  • 1/4 cup roughly chopped dried cherries or cranberries
  • Crackers or crostini for serving

Instructions

  1. Heat oven to 180°C and arrange a rack in the middle.
  2. Place pistachios on oven tray on baking paper and bake until golden brown and toasted, about 10 minutes. Meanwhile, heat honey with cinnamon or cardamom in a small pan over medium heat. When it comes to a boil, remove from heat.
  3. Place cheese in a small ovenproof baking dish and bake until still intact but cheese is melty and soft, about 10 minutes.
  4. When ready to serve, place cheese on a serving plate, top with a few spoonfuls of the honey (discarding the cinnamon or cardamom) and a spoonful of the toasted pistachios and some dried fruit. Serve immediately with crusty bread or crackers.

Honey-Baked Camembert with Bacon and Rosemary – What a recipe. This dish simply OOZES with a fantastic combination of honey and creamy cheesy Camembert goodness. Add some salty bacon, and your friends will be DYING to know this quick and simple recipe.

Ingredients

  • 1 wheel of camembert cheese
  • 100 g bacon pieces
  • 1 tbsp butter
  • 2 tsp fresh rosemary
  • 1-2 tsp honey

Instructions

  1. Heat oven to 180°C and arrange a rack in the middle.
  2. Heat the butter in a pan over medium heat. Add the bacon and rosemary and sautee for a few minutes until the bacon is cooked and the rosemary is fragrant. Remove from heat and set aside.
  3. Slice the top off the camembert. Place in the oven and cook for 10 mins until the cheese is soft but still intact Be careful not to overcook.
  4. Transfer cheese to a serving plate. Top with sautéed bacon and rosemary, then drizzle with honey.
  5. Serve immediately with slices of your favourite crusty bread or crackers
